Biennial Also called escarole, Batavian endive's large, broad, slightly twisted, lettuce-like leaves form round, tight-packed heads. They are well-blanched, with creamy-white deep hearts, and a bulky texture. The leaves are slightly bitter. Endive is delicious raw in salads, braised or steamed.
